Montreal Cooking Class: Making Paella at Ateliers and Saveurs
Want a unique and fun experience in Montreal? Then take a cooking class at Ateliers & Saveurs. We did, and we liked it!
WJ joined a small group (total of 6 women) for a lunchtime paella cooking class. Chef Nicole at Ateliers & Saveurs spent 30 minutes guiding us through the preparation of a quick, simple, and delicious paella recipe.

With 6 participants in our group, we each were given a task (chopping) to hasten the prepping of vegetables and meats.

The other participants diced chicken, chopped chives, and sliced chorizo.
Toasting the Rice for Paella
Jill stirred the rice, gently toasting it until it was ready for the white wine and chicken stock to be added.

Next the saffron and paprika were added, giving the rice mixture a beautiful golden-orange hue.

Marie José added the sauteed peppers to the simmering rice.

The diced chicken thighs were then sauteed until they were thoroughly cooked.

Chef Nicole demonstrated the best way to prepare and cook the mussels separately from the other ingredients.

A little more gentle stirring of the rice is required to absorb the remaining liquid.

With the rice and mussels cooked, it was time to plate our creation.

Our paella cooking class at Ateliers & Saveurs was a steal of a deal at only CDN$20 per person. Not only did we learn how to make this yummy dish, we enjoyed it for lunch. Now that’s our kind of foodie activity!

Spanish Paella with Mussels, Chicken and Chorizo Recipe – Courtesy of Ateliers & Saveurs:
Serves 4
Ingredients:
– 300 g Basmati Rice
– 1 Red Onion
– 1 Yellow Pepper
– 1 Red Pepper
– 1 Clove Garlic
– 2 Sprigs Thyme
– 1 Pinch Saffron
– 1 Pinch Paprika
– 200 ml White Wine
– 800 ml Chicken Stock
– 100 g Spanish Chorizo
– 4 Boneless Chicken Thighs
– 500 g Fresh Mussels
– 12 Sprigs Chives
• Olive oil
• Salt and pepper
Preparation – 30 minutes:
1. General Preparation
Cut the chorizo into dice. Cut chicken thighs into cubes. Dice the peppers. Chop the red onion. Chop the chives.
2. Paella Preparation
In a large hot pan, drizzle some vegetable oil and fry the onion, peppers and chorizo for a few minutes. Add chopped garlic and rice and cook for 1 minute. Deglaze white wine, then add the paprika, thyme, and saffron. Turn down the intensity of the heat and add chicken broth and simmer about 20 minutes. Season with salt and pepper and lemon juice to taste.
3. Garnish Cooking
In a large hot pan, drizzle some vegetable oil and fry the chicken pieces over high heat for 4-5 minutes. Deglaze with the remaining white wine, add the mussels, place a lid and cook for a few minutes until the mussels are cooked.
4. To Serve
Serve your paella in a beautiful bowl and garnish with chicken pieces, mussels and chives.
