Yummy Breakfasts – Viv’s Mum’s English Scone Recipe

Makes: 4 – 8
Don’t wait for them to cool before devouring!

Dry Ingredients:

  • 2 cups of All-Purpose flour ~ plus more for rolling out
  • pinch of salt
  • 1 tablespoon baking powder
  • 1 tablespoon brown sugar

*Mix dry ingredients together

Wet Ingredients:

  • 2 large eggs
  • 1/2 to 3/4 cups of buttermilk
  • Whisk eggs and 1 1/2 cups of buttermilk together
  • 1/3 cup of cold butter – cubed

*Use food processor or mix by hand into a crumb mixture – dry ingredients and cubed butter.

Directions:

Preheat oven to 400 F and line baking sheet with parchment paper.

  1. Pour egg and buttermilk mixture into dry crumb mixture – combine until it forms a ball – Do NOT overmix
  2. Place dough onto a lightly floured work surface, flour hands and gently pat dough into a round or square, about 3/4 inches thick
  3. Use a 2 inch round cutter and make about 8 to 10 rounds
  4. Transfer rounds to lined baking sheet
  5. Brush top with small amount of milk, buttermilk or cream and sprinkle with sugar
  6. Bake for 15 -25 minutes until golden brown
  7. Remove from oven and place on wire rack to cool

Top with strawberry jam and whipped cream.
